Grade C maple syrup has a more characteristic maple flavor and is slightly darker than grade A maple syrup. It is a traditional Canadian product – it is a concentrated juice from the maple tree. This syrup is produced by piercing the trunk of mature maple trees through which the juice flows into containers. Trees can live up to 250 years, the juice is produced from trees aged 50 to 80 years. For one liter of syrup you need 35-40 liters of juice. The raw juice contains up to 97% water, which is then evaporated until the syrup is formed. In organic production, strict care must be taken to ensure that the maple trees that produce the juice are ripe and that the intake of the juice does not affect their growth.
Maple syrup contains about 5% fructose, about 5% glucose and about 66% sucrose .

Is Maple Syrup a Healthy Sweetener?
Maple syrup is a natural sweetener and contains sugars, but much less of a higher quality than those of pure sugar. By comparison, maple syrup contains only 2/3 of the sucrose contained in sugar . This means that 100 grams of maple syrup contains 67 grams of sugar or, to put it another way, by using maple syrup, you reduce your sugar intake by one third.
Maple syrup also contains several antioxidants and many minerals , mainly zinc and manganese, which are completely missing from sugar.
