Beluga black lentils are a variety of fine black lentils and owe their name to their resemblance to Beluga caviar. They are grown in the cool, dry climates of Central Greece and are rarer in grocery stores than red, yellow and green lentils.
These lentils are high in fiber and folic acid. Unlike green lentils, black lentils contain anthocyanins – powerful antioxidants found in blackberries such as blackberries and blueberries. These antioxidants are excellent at preventing cell damage from free radicals.
Black chickpeas are an ancient traditional variety of the Mediterranean coast, where they are always used for rustic soups, rich in flavor and velvety texture.
