Cretan honey is extremely refined, truly unique and is ultimately a reflection of the area being collected. The island has a very rich and abundant flora due to the exceptional sunshine, which allows 2,200 beekeepers to make a living from the estimated production of 12,000 tons of honey per year.
In Greece, beekeeping is a real tradition that goes back several million years. From ancient times the Greeks knew about its great nutritional value and had associated it with divine properties, as evidenced by numerous archaeological finds, even mythology.
In fact, honey plays an important role in the Cretan diet , as it is consumed in large quantities and was appreciated long before olive oil or wine. Most confectionery specialties contain it and it is the main ingredient in many sweets such as baklava or tulumba.
This honey from wildflowers, thyme, wild herbs and pine is a real concentrate of nature and is a real reflection of the land from which it comes . It is therefore something special and unique from one production to another.

Unfiltered honey can crystallize after about 8 to 18 months, depending on storage conditions and temperature. Crystallization is a natural process and a sign of purity. Place the jar of honey in hot water to restore its consistency without undermining its nutrients.
