When ground, durum wheat is known as semolina and is used all over the world in baked goods, pasta and as a cream for breakfast (porridge). It is darker and more golden in color than flour for all uses. It has a soft, earthy scent.
Here are some other ways to use semolina:
- Add a few teaspoons to the bread dough for a crunchy texture.
- Mix it with boiling milk, honey and vanilla extract for a delicious dessert pudding or hot cereal.
- Replace regular flour with semolina to add extra crunch to the dough recipes.
- Use it to thicken a stew or sauce.
- Sprinkle over potatoes before cooking for extra crunching.
