Soy and its products have been a daily food of Asian peoples for centuries. Many studies conclude that soy is a factor of longevity for these peoples, but also of good health, as it acts as a deterrent to many diseases.

Soy flour, in addition to protein, contains all the B vitamins , calcium , phosphorus , potassium , magnesium & iron . It also contains sufficient amounts of linoleic acid , the unsaturated fatty acid that is essential for the body.

Soy flour is produced by roasting, crushing and then grinding soybeans. This high protein flour can be used as a substitute for wheat flour in breads, cakes and savory dishes. It can also be used in combination with wheat flour, or with “thickening” flours such as tapioca starch.
Soy flour is extremely high in protein. It is also gluten free by nature.

Soy flour is similar in taste and consistency to chickpea flour. Because soy flour is gluten-free, it must be mixed with a binder such as tapioca flour or egg to keep it together.

To make pancakes: Mix about half a cup of soy flour with half a cup of milk and half a cup of hot water. Mix well and add 2 eggs and a pinch of salt. Beat to batter, adding soy flour / water until the mixture has a thick but moist texture. Heat a non-stick pan with a little oil and add enough of the mixture to cover the pan. Bake until golden brown on the bottom, then turn over and finish.

For flat bread (pies): Mix 1 cup soy flour and 1 cup water, then add extra soy flour or water until dough is formed. Add 2 beaten eggs and a pinch of salt and knead into the mixture. Divide into balls and make the pies with the rolling pin. Fry for 15 minutes or bake in a medium-hot oven. This mixture can also be used as a pizza base. For egg-free mixture, use tapioca flour instead of egg.

In Indian recipes: Soy flour can be used instead of chickpea flour in most Indian recipes, including Pakora and “noodles”.
